硒对香菇品质的影响

Effects of Selenium on Lentinus edodes Quality

  • 摘要: 以武陵山区常用的6个香菇菌株‘238’‘236’‘705’‘808’‘60’‘夏菇1号’为研究对象,以亚硒酸钠为硒源进行富硒驯化,对硒富集能力比较强的菌株进行了袋料栽培试验,并比较了不同硒浓度下香菇的营养品质,以期为富硒香菇的生产提供参考依据。结果表明:低浓度的硒可以促进香菇菌丝体的生长,且硒浓度与香菇子实体产量呈正相关,在菌棒中亚硒酸钠浓度为60 mg·L-1时,香菇子实体产量为1.20 kg·袋-1,硒含量344.28 mg·kg-1、有机硒占比98.83%,其中,蛋白质含量为24.10%、多糖含量为56.98 mg·g-1,相比对照组分别提高了15.59%、24.98%。综合来看,一定浓度的硒可以促进香菇的生长,对香菇的营养品质也有一定的提升。

     

    Abstract: Six Lentinus edodes strains were used as research objects, such as ‘238’‘236’‘705’‘808’‘60’ ‘Summer No.1’,which from Wuling mountain.The Lentinus edodes strains were selenium-rich domesticated by sodium selenite, and the stronger of selenium enrichment was used for cultivating.Nutritional quality was compared whith different concentrations of selenium, in order to provide reference for selenium-rich L.edodes production.The results showed that low concentration of selenium promote growth of Lentinus edodes mycelium, and selenium concentration was positively correlated with the fruiting body yields of Lentinus edodes.In level of 60 mg·L-1,the fruiting body yields was 1.20 kg per bag, the selenium content was 344.28 mg·kg-1 and one of organic selenium was 98.83%.Compared with the control, the contents of protein and polysaccharide were 24.10% and 56.98 mg·g-1,which increasing 15.59% and 24.98%,respectively.In conclusion, low level of selenium promote growth of Lentinus edodes as well as improve the nutritional quality.
