Abstract:
Taking Hypsizygus marmoreus as test material, the mycelia supplemented with different concentrations of calcium chloride were cultured by solid and liquid culture methods, the effects of calcium on the mycelial growth of Hypsizygus marmoreus under solid and liquid culture conditions as well as the enrichment and biotransformation of calcium by mycelia were studied, in order to provide a reference for further development of calcium-rich mushroom products. The results showed that low concentration of calcium had no significant effect on the growth of mycelium of Hypsizygus marmoreus.Under the conditions of solid culture, the growth of mycelium was inhibited when the calcium concentration was greater than 250 mg·L
-1.However, the growth of mycelium was inhibited when the calcium concentration was greater than 150 mg·L
-1under the conditions of liquid culture. There were great differences in calcium tolerance of Hypsizygus marmoreus mycelium under different culture conditions. At the same time, it was found that the total calcium content in mycelium increased with the increase of calcium concentration under the conditions of liquid culture. In the concentration range of 0-200 mg·L
-1,the proportion of organic calcium content was higher, indicated that the mycelium had a strong ability to convert calcium in this concentration range. When the amount of calcium was 100 mg·L
-1,the total calcium content was 2 239.8 mg·kg
-1,and the calcium enrichment rate was 1.83%,of which 40.15% was organic calcium..
