Abstract:
Pleurotus ostreatus ‘Jiza 26’ was used as the test material, the method of amino acid quantitative analysis was used, the amino acids types and compositions of fruit bodies from different pear sawdust formula were studied, the nutritional value of fruit bodies were evaluated and compared, in order to provide reference for the cultivation of Pleurotus ostreatus with high nutritional value, varieties of nutritional value evaluation methods were used to evaluate and compare the nutritional value of fruit bodies.The results showed that the fruit bodies of Pleurotus ostreatus all contained 17 kinds of amino acids.Fruit bodies of Pleurotus ostreatus cultivated by formula 1(pear sawdust 33%+corn cob 30%+cottonseed skin 30%+bran 5%+gypsum 2%) had the highest content of total amino acid, medicinal amino acid, umami amino acid and bitter amino acid, and the chemical score CS was the highest.Fruit bodies of Pleurotus ostreatus cultivated by formula 2(63% pear sawdust+30% cottonseed skin+bran 5%+gypsum 2%) had the highest protein amino acid score(AAS),SRC value, essential amino acid index(EAAI) and biological value(BV).Fruit bodies of Pleurotus ostreatus cultivated by Formula 3(63% pear sawdust+30% corn cob+bran 5%+gypsum 2%) had the highest total essential amino acid content and nutritional index(NI).Fruit bodies of Pleurotus ostreatus cultivated by formula 4(90% pear sawdust+bran 8%+gypsum 2%) had the highest sweet amino acid content.The chemical score CS and the nutritional index NI were negatively correlated with the total nitrogen and total phosphorus content of the cultivation medias, and positively correlated with the iron content; SRC was the opposite.Conclusions showed that the effects of the mixture of pear sawdust and different materials on amino acid variety, content and protein nutritive value of fruit body were different, which could provide reference for the cultivation of Pleurotus ostreatus with high nutritive value, promote the utilization of pear sawdust.
