壳聚糖复合硒处理对“红地球”葡萄采后贮藏品质和质地的影响

Effects of Chitosan Combined With Selenium on Postharvest Storage Quality and Texture of ‘Red Globe’ Grape

  • 摘要: 以“红地球”葡萄为试材,采用壳聚糖复合硒(1.0%壳聚糖和25 mg·L-1亚硒酸钠)溶液浸泡的方法,研究了壳聚糖复合硒处理对“红地球”葡萄贮藏品质和质地的影响,以期为葡萄保鲜新方法提供参考依据。结果表明:与对照相比,壳聚糖复合硒处理能有效降低葡萄的失重率、腐烂率和呼吸强度,保持葡萄中可溶性固形物、可滴定酸和还原糖的含量,维持葡萄较高的硬度、弹性、咀嚼性及粘附性。因此,壳聚糖复合硒处理可有效保持“红地球”葡萄采后贮藏品质和质地。

     

    Abstract: Taking ‘Red Globe’ grape as the test material, the method of soaking in chitosan complex selenium solution(1.0% chitosan and 25 mg·L-1 sodium selenite) were adopted.The effects of chitosan combined with selenium on the storage quality and texture of ‘Red Globe’ grape were studied, in order to provide reference for a new method of grape preservation.The results showed that chitosan combined with selenium treatment reduced the weight loss rate, decay rate and respiratory intensity of grapes, maintained the content of soluble solids, titratable acids and reduced sugars in grapes, and maintained higher hardness, elasticity, chewiness and adhesion of grapes.Therefore, chitosan combined with selenium could effectively maintain the storage quality and texture of ‘Red Globe’ grape.
