Abstract:
Taking cut-flower purple carnation as the test material,a single-factor pre-test was used to obtain the best conditions for pigment extraction.Through orthogonal experiments,the best combination extraction conditions of purple carnation pigment and the influence of various external conditions on the absorbance,solution color and pigment stability were studied,in order to provide reference for extracting purple pigment.The results showed that the best combination extraction conditions for purple carnation pigments were pH 2,60% citric acid solution,and solid-liquid ratio of the 1∶1 500 g·mL
-1 solution was extracted at a constant temperature of 40 ℃ for 180 minutes.The pigment was easily soluble in citric acid and water,was a water-soluble pigment,and had a maximum absorption peak at 340 nm in the visible light region.Alkaline environment and light environment significantly affected its stability.Cu
2+ and Fe
3+ ions affected the pigment more than other metal ions such as Al
3+,Ca
2+,Zn
2+ and so on.The oxidant had a significant effect on reducing its color,but the pigment had strong reduction resistance.Soluble starch and reducing agents had a certain color-increasing effect on it.
