采后果蜡处理对苹果果实品质的影响

Effects of Fruit Wax on Quality of Post-harvest Apple

  • 摘要: 以‘岳华’‘富士’‘寒富’苹果为试材,采用果实打蜡方式,以不涂果蜡作为对照,通过观察果实外观变化、测定果实乙烯生成量、硬度、可溶性固形物含量、抗坏血酸含量、可滴定酸含量以及失重率,研究果蜡对苹果果实品质的影响,以期为打蜡技术在采后苹果贮藏的理论研究和实践技术方面提供参考依据。结果表明:果蜡处理果实后,果实表皮更加光泽鲜亮,显著延后了果实转色期,延缓了果实抗坏血酸和可滴定酸含量以及硬度的下降,降低了果实乙烯生成量和失重率,对果实可溶性固形物含量影响不显著。综上所述,采后果蜡处理改善了苹果果实的外观品质和内在品质。

     

    Abstract: Taking ‘Yuehua’‘Fuji’ and ‘Hanfu’ apples as test merterial, fruit waxing was adopted, and no fruit wax was used as the control.By observing the changes of fruit appearcance, measuring the ethylene production,hardness,soluble solids content,ascorbic acid content,titratable acid content and weight loss rate of fruit,the effect of fruit wax on apple quality was studied,in order to provide reference for waxing technology in the theoretical research and practical technology of post-harvest apple storage.The results showed that fruit wax treatment made the fruit skin much shinier and brighter than the control group and significantly delayed the fruit color turning stage.Fruit wax treatment also delayed the decrease of the content of ascorbic acid and titratable acid as well as the hardness of the fruit,reduced the ethylene production and weight loss rate of the fruit,but had no significant effect on the content of soluble solids.Fruit wax treatment improved the appearance and internal quality of post-harvest apple fruits.
