Abstract:
Cordyceps militaris fruiting body was used to compare the polysaccharide and protein content of Cordyceps militaris fruiting body in wheat, rice and silkworm chrysalis as the medium, and the enzyme activity indexes such as laccase, cellulase, amylase, protease, filter paper enzyme and polyphenol oxidase, etc, so as to analyze the correlation between intracellular enzyme activity and polysaccharide and protein content, in order to provide reference for the cultivation of Cordyceps militaris fruiting body with high protein and polysaccharide.The results showed that polysaccharide and protein content in Cordyceps militaris were all higher than those in wheat and rice matrix.Also, as the double test analysis showed, the accumulation of polysaccharides in Cordyceps militaris fruiting body was significantly positively correlated with cellulase activity, and negatively correlated with protease activity.The accumulation of protein in Cordyceps militaris fruiting body was significantly positively correlated with amylase activity and negatively correlated with polyphenol oxidase activity.
