Abstract:
Taking Pleurotus nebrodensis as the test material, the effects of three different packaging materials on the quality changes of Pleurotus nebrodensis in low temperature storage were studied by comprehensive analysis and principal component analysis, in order to provide reference for the selection of storage methods.The results showed that the plastic wrap could effectively reduce weight loss, maintain hardness, reduce carbohydrate consumption, maintain high SOD and CAT activities, and delay the increase of MDA and membrane permeability.The fruiting body of wrapping paper treatment group was seriously browned, tissue softening and nutrient consumption were serious, and PPO activity was significantly higher than those of the other two groups.Principal component analysis extracted two principal components, and the cumulative contribution rate reached 87.90%,which could explain most of the information of the original data.MDA,PPO and SOD were highly correlated with the first principal component(PC1).The indexes with high correlation with the second principal component(PC2) were total sugar and weight loss rate.The results of PCA showed that weight loss rate, antioxidant enzyme activity and electrical conductivity were the key indicators that affected the storage quality of Pleurotus nebrodensis.The oxidation degree of plastic wrap treatment group was lower which could maintain high antioxidant enzyme activity.The weight loss rate of the wrapping paper treatment group increased significantly compared with the other two groups.The group treated with plastic wrap got the highest score at the end of storage.Therefore, plastic wrap could effectively reduce water loss and carbohydrate consumption, and delayed oxidation and senescence of Pleurotus nebrodensis.
