Abstract
Three sizes of Bletilla striata tuber of large, medium, and small were taken as the test material.The effects of 70 ℃ drying after 110 ℃ dry-blanching for 30 minutes(HG) and natural drying in the shade after 100 ℃ boiling for 5 minutes(YG) on heavy metals, trace elements, active ingredients and comprehensive quality in different sizes of Bletilla striata tuber were investigated by using AHP-TOPSIS methods, in order to provide reference for the rational selection of primary processing methods for Bletilla striata.The results showed that under HG treatment, the total amount of cadmium, arsenic, copper, manganese and trace elements were significantly different among different Bletilla striata tubers.The total contents of cadmium, arsenic, copper, manganese, zinc and trace elements in the same size tubers were significantly different between YG and HG treatments.Different primary processing methods and different sizes had effects on the total phenolic content in Bletilla striata tubers.The comprehensive quality was ranked as HGsmall>HGlarge>YGlarge>HGmedium>YGmedium>YGsmall.In conclusion, small tubers could only be treated with HG;HG and YG were suitable for medium and large tubers, however, it was recommended to save processing time with HG.
