Abstract:
Meat flavor is crucial to improve food flavor and quality. Modern high technology of food processing plays a critical role in the development of meat flavor industry, which directly determines the quality and competitive advantage of products. This paper summarized the modern food processing technology commonly used in the process of meat flavor production, such as enzymatic hydrolysis technology, thermal reaction technology,drying concentration technology, supercritical extraction technology, and microcapsule technology. The purpose is to provide theoretical basis for the research of meat flavor.
