Abstract:
To study the composition and content of pickled ginger essential oil, pickled ginger and ginger essential oil were extracted by distillation, and the components of pickled ginger and ginger essential oil were analyzed by gas chromatography-mass spectrometer. The results showed that, there were 45 kinds of volatile components in pickled ginger essential oil, 13 kinds of volatile components were only found in pickled ginger essential oil, including eucalyptol, terpinen, β-panasinsene, α-elemene and so on. 32 kinds of volatile components were found in pickled ginger and ginger essential oil, which were zingiberene, β-bisabolene, curcumene, γ-muurolene, citral, geranialdehyde and so on. This study determined the main composition in pickled ginger essential oil, which provide a theoretical basis for the evaluation of the taste and the function of pickled ginger.
