蓝莓涂膜保鲜研究进展

Research Advances on Coating Techniques of Blueberry

  • 摘要: 蓝莓营养丰富,是人类五大健康食品之一,备受消费者青睐。蓝莓采摘多集中于高温高湿季节,由于采后果实生理代谢旺盛,不耐贮藏,极大地限制了蓝莓产业的发展。涂膜保鲜具有操作方便、保鲜效果好、绿色健康等优点,在蓝莓保鲜贮藏中发展前景广阔。本文综述了涂膜技术在蓝莓贮藏保鲜中的研究进展,主要介绍了涂膜保鲜原理及蛋白质、脂质和多糖等可食用性涂膜材料在蓝莓保鲜中的应用现状,并对未来的研究方向进行了展望。

     

    Abstract: Blueberry has been popular to the consumer attributed to its nutrition and recognized as the one of the top five healthy foods. Blueberries are perishable for being picked mostly in the season with high temperature and humidity owing to vigorous postharvest metabolism, which limits the development of blueberry industry. Coating preservation have excellent development prospects in blueberry storage due to its easiness to control, high efficiency and good safety. This paper gave a general and detailed overview on the application of blueberry film preservation,containing the theory of coating, the type and applications of coating on blueberry. In addition, it provides a theoretical basis for the application of film preservation in blueberry.
