Abstract:
With the improvement of people’s demand for food nutrition and safety, plant-derived fruits and vegetables preservatives are considered to be the best substitute for chemically synthesized preservatives, especially traditional Chinese medicine extracts, as a natural, safe and effective preservative, have received extensive attention in recent years. In this paper, the application scope and mechanism of action of traditional Chinese medicine extracts in the storage of fruits and vegetables are reviewed, the existing problems are analyzed, aiming to provide reference for further research and application of traditional Chinese medicine extracts in the field of fruits and vegetables storage.
