摘要: 对枣渣中的主要功效成分(膳食纤维、多糖、黄酮、脂肪酸)及其提取技术进行总结,并对其后续在饲料、烘焙产品、乳制品中的综合利用研究进行了概述,以期实现对枣渣中功效物质的更好利用。Abstract: This article mainly summarized the extraction of main functional components in jujube residue,including dietary fiber, polysaccharides, flavonoids, and fatty acids, and reviewed the research on its subsequent comprehensive utilization in feed, bakery products, and dairy products. The goal of this study was expected to achieve the recognition of jujube residue with better use of effective substances.
