Abstract:
Hawthorn is an important medicine and food homology material with high edible value and health care value. The fruit, seeds, and leaves of hawthorn contain various functional components, which have anti-oxidation, anti-inflammation, blood lipids regulation, and neuroprotective effects. By summarizing the current processing technology of hawthorn products and the comprehensive development and utilization of hawthorn pigment, pectin, seeds, and leaves,the reference is provided for the processing and comprehensive development and utilization of hawthorn, in order to promote the high-value utilization of hawthorn resources and promote the development of hawthorn industry.
