花粉发酵研究进展

Research Progress of Fermented Pollen

  • 摘要: 花粉为植物雄性配子体,营养组成全面均衡,活性物质含量较高,是优良的保健食品原料。对花粉的营养组成、保健功能及花粉发酵进行概述,着重阐述了花粉固态及液态发酵的方式和作用,以期为花粉产品深加工提供可行的研究思路及科学依据,推动我国花粉市场进一步发展。

     

    Abstract: Pollen is the male gametophyte of plant, the nutrient composition is comprehensive and balanced while the active substance content is high, which is an excellent health food raw material. The nutritional composition,health function and fermentation of pollen were summarized in this paper, and the mode and function of solid and liquid fermentation of pollen were emphasized, in order to provide feasible research ideas and scientific basis for deep processing of pollen products and promote the further development of China’s pollen market.
