乙烯清除剂在果蔬保鲜中的研究进展

Research Progress of Ethylene Scavengers for the Preservation of Fruits and Vegetables

  • 摘要: 乙烯作为一种催熟果蔬的植物激素,能够通过催熟果蔬改善其风味和品质,但也会加速果蔬的腐烂,因此合理有效的控制果蔬在贮藏、运输等过程中乙烯的含量对延长果蔬货架期,保持果蔬新鲜度具有重要意义。针对乙烯清除剂在果蔬保鲜方面的研究进行了综述,对通过物理方法、化学方法和乙烯生物合成抑制方法制备的不同乙烯清除剂的应用进行了阐述。

     

    Abstract: As a plant hormone that accelerates the ripening of fruits and vegetables, ethylene can not only improve the flavor and quality of products, but also accelerate the ripening and decay. Therefore, reasonable and effective control of ethylene content during the storage and transportation of fruits and vegetables is of great significance to prolong the shelf life and keep freshness of fruits and vegetables. Therefore, this paper reviewed the studies of ethylene remover in preserving fruit and vegetable, and analyzed the research progress of different ethylene remover in terms of physical,chemical methods and biosynthesis inhibitors.
