Abstract:
Edible coating can form a barrier between fruit and atmosphere, regulating the gaseous environment around the fruit, which decreases the migration of water from fruit to the environment. Meanwhile, the edible coating can also reduce the infection of microorganisms. As an effective postharvest preservation technology for fruits,the properties of edible coatings and its application on fruit preservation have been extensively studied. We provided a detailed review on the physical and mechanical properties of edible coatings and the applications in fresh fruit preservation with perspectives in this article, aiming to provide ideas for the development and application of edible coatings in the future.
