Abstract:
Taking Atlantic potato as the experimental object, and the storage gaseous environment of 5% O2+2%CO2(CA) at the storage temperature of(10±1) ℃. The natural conditions at the same temperature were used as the control(CK). The effects of controlled atmosphere storage environment on potato nutritional quality, appearance quality, and endogenous hormones were investigated, and the effect of controlled atmosphere storage on potato was evaluated. The results showed that compared with CK group, CA storage environment could delay the increase of reducing sugar content, inhibit the browning and greening of potato skin, and reduce the germination rate, decay rate and weight loss rate. CA storage environment significantly increased the content of ABA in potato tubers,which inhibited the increase of IAA content and reduced the peak value of GA3content, and positively regulated the contents of three endogenous hormones. The 5% O2+2% CO2storage environment can maintain good storage performance at(10±1) ℃. This technology can provide a theoretical foundation for the safe storage of processed potatoes.
