气调贮藏对马铃薯保鲜效果的影响

Effect of Controlled Atmosphere Storage on Potato Storage

  • 摘要: 以大西洋马铃薯为试材,在(10±1)℃条件下,于5%O2+2%CO2气调(CA)环境中贮藏150 d,以相同温度自然条件贮藏作为对照(CK),考察气调贮藏环境对马铃薯营养品质、外观品质及内源激素含量的影响。结果表明:与CK相比,CA处理能够延缓马铃薯在长期贮藏过程中块茎还原糖含量的上升,抑制薯皮的褐变及绿变,并且能够降低块茎贮藏过程中的发芽率、腐烂率及失重率。CA贮藏显著提高了马铃薯块茎中脱落酸(ABA)的含量,抑制了生长素(IAA)含量的上升,降低了赤霉素(GA3)含量的峰值,对3种内源激素含量有积极的调控作用。5%O2+2%CO2气调贮藏环境可保持加工薯在(10±1)℃条件下具有良好的贮藏保鲜效果,该技术可为马铃薯的安全贮藏提供一定的理论基础。

     

    Abstract: Taking Atlantic potato as the experimental object, and the storage gaseous environment of 5% O2+2%CO2(CA) at the storage temperature of(10±1) ℃. The natural conditions at the same temperature were used as the control(CK). The effects of controlled atmosphere storage environment on potato nutritional quality, appearance quality, and endogenous hormones were investigated, and the effect of controlled atmosphere storage on potato was evaluated. The results showed that compared with CK group, CA storage environment could delay the increase of reducing sugar content, inhibit the browning and greening of potato skin, and reduce the germination rate, decay rate and weight loss rate. CA storage environment significantly increased the content of ABA in potato tubers,which inhibited the increase of IAA content and reduced the peak value of GA3content, and positively regulated the contents of three endogenous hormones. The 5% O2+2% CO2storage environment can maintain good storage performance at(10±1) ℃. This technology can provide a theoretical foundation for the safe storage of processed potatoes.
