Abstract:
Fresh roses cannot be preserved for a long time as they are easily deteriorated and discolored after picking. Drying can effectively prolong the shelf life of roses. In this review, five commonly used drying technologies of roses, such as physical methods, hot air, heat pump, vacuum freezing and microwave are summarized, and their working mechanisms and application examples were briefly expounded. In addition, the current status of processing and utilization of roses was introduced. The purpose of this paper aims to provide theoretical references for green and energy-saving drying techniques of roses, as well as for the utilization of rose resources and the development of industry.
