绿原酸的提取及其抑菌作用研究进展

Research Progress on Extraction and Antibacterial Effects of Chlorogenic Acid

  • 摘要: 绿原酸(CHA)是植物有氧呼吸过程中经莽草酸途径产生的一种苯丙素类物质,具有抗氧化、抑菌等多种功效,被广泛应用于食品、医药、保健、化工等领域。综述了CHA的生物活性、提取方法和抑菌效果等方面的研究进展,为进一步改良CHA的提取方法、拓展CHA在果蔬保鲜方面的应用提供参考借鉴。

     

    Abstract: Chlorogenic acid(CHA) is a phenylpropanoid substance produced by shikimic acid pathway during aerobic respiration in plants, and has exhibited multiple functions including antioxidant, antibacterial effects, and has been widely applied in food, medicine, health care, chemical engineering, and other fields. In this paper, the research progress on biological activities, extraction methods and antibacterial effects of CHA were summarized,which could provide theoretical basis for further improving the extraction methods of CHA and expanding the applications of CHA in fruits and vegetables preservations.
