Abstract:
Fresh-cut fruits and vegetables have the advantages of convenience, freshness and safety and are loved by consumers. However, cutting and dividing fruits and vegetables will cause a series of problems such as microbial infection, browning and shortened shelf life. Light-emitting diode(LED) light treatment technology can reduce the respiratory intensity of fruits and vegetables, delay aging, and is widely used in fresh cut fruits and vegetables because of its low cost, green safety and other advantages. This paper summarizes the influence of LED light technology on the sensory quality, physiological quality and surface microorganisms of fresh-cut fruits and vegetables, in order to provide theoretical reference for LED light technology in the application of fresh-cut fruits and vegetables.
