Abstract:
Mulberry leaves are a food with both medicinal and dietary properties, possessing various pharmacological effects. In recent years, with the increasing demand for healthy diets, mulberry leaf powder and mulberry leaf extracts,as a novel type of health food, are becoming more widely utilized in the processing of food and pharmaceuticals.Through literature review and case analysis, the processing technologies, nutritional values, functional characteristics,current application status and research progress of mulberry leaf powder and extract are introduced. The future development direction of mulberry leaf powder and extract is prospected, aiming to further promote the development of mulberry industry and facilitate its application in food and drug processing.
