Abstract: Radix puerarias is a medicinal and edible plant certified by the Ministry of Health. It has rich nutrition and high medicinal value. This paper reviews the nutrition and health function of Radix puerariae, and the processing status in both domestic and overseas as well as its application in beverage development, in order to provide directions for the innovation of healthy beverage.
