3种常用防腐剂复配对巴哈利抑菌效果的影响

Effects of Three Commonly Used Preservatives Compounds on the Antibacterial Activity of Bahali

  • 摘要: 为延长巴哈利货架期,以菌落总数为评价指标,研究山梨酸钾、双乙酸钠、脱氢乙酸钠等化学防腐剂单一使用及复配比例对其抑菌效果的影响。结果表明,3种化学防腐剂单一使用的最佳添加量为:山梨酸钾0.8 g/kg,双乙酸钠2 g/kg,脱氢乙酸钠0.4 g/kg。复配使用的最佳配比为:0.25 g/kg山梨酸钾+1 g/kg双乙酸钠+0.25 g/kg脱氢乙酸钠。复配防腐剂的效果优于单一防腐剂,可以使巴哈利的保质期从5 d延长至18 d。

     

    Abstract: In the present study, the effects of single potassium sorbate, sodium diacetate and sodium dehydroacetate and their compounds ratios on the antibacterial activity of bahali were researched using the total number of colonies as the evaluation indicator, aiming to prolong the shelf life. The results showed that the best single-used dosages of potassium sorbate, sodium diacetate and sodium dehydroacetate were 0.8 g/kg, 2 g/kg and 0.4 g/kg,respectively. The best compound ratio was determined as follows: potassium sorbate of 0.25 g/kg, sodium diacetate of 1 g/kg and sodium dehydroacetate of 0.25 g/kg. The combined preservative showed better antibacterial effects than these single preservatives, which could prolong the shelf life of Bahali from 5 days to 18 days.
