Abstract:
In the present study, the effects of single potassium sorbate, sodium diacetate and sodium dehydroacetate and their compounds ratios on the antibacterial activity of bahali were researched using the total number of colonies as the evaluation indicator, aiming to prolong the shelf life. The results showed that the best single-used dosages of potassium sorbate, sodium diacetate and sodium dehydroacetate were 0.8 g/kg, 2 g/kg and 0.4 g/kg,respectively. The best compound ratio was determined as follows: potassium sorbate of 0.25 g/kg, sodium diacetate of 1 g/kg and sodium dehydroacetate of 0.25 g/kg. The combined preservative showed better antibacterial effects than these single preservatives, which could prolong the shelf life of Bahali from 5 days to 18 days.
