Abstract:
In the present study, the influence laws and adding ranges of selenium-enriched black rice powder,selenium-enriched black soybean powder, xylitol and konjac refined powder additions on the sensory quality of selenium-enriched black rice meal replacement powder were investigated through single factor experiments, and then the optimum formula was determined through orthogonal test. The results showed that the optimal formulation for selenium-enriched black rice meal replacement powder was determined as follows: product quantity of 30.0 g, selenium-enriched black rice flour addition of 10.0 g, selenium-enriched black bean flour addition of 6.0 g, xylitol addition of 7.0 g, konjac flour addition of 0.4 g, black sesame flour addition of 2.5 g, peanut flour addition of 2.5 g,lily powder addition of 0.8 g and lotus seed powder addition of 0.8 g. Under these conditions, the selenium-enriched black rice meal replacement powder showed purplish black color with excellent solubility, and presented harmonious aroma, rich fragrance and smooth entrance.
