Abstract: The production and export volume of Chinese jujube rank first in the world. However most fresh jujubes rot and deteriorate because of the short shelf life due to the deficiency of research on processing technology. It is very important that taking advantage of the unique advantages of jujube raw materials to develop the high-end jujube products and products in line with the concept of mass consumption. This paper summarizes the research status of dried red jujube products such as dried date and nutritional powder, and fermented jujube products including red jujube wine, jujube yogurt, jujube vinegar and jujube beverage. and prospects the future processing and research directions of red jujube products, which aims to provide theoretical reference for the research and development of Chinese jujube series products.
