Abstract:
Polyphenols are the secondary metabolites of plants with multifaceted biological effects, such as antioxidation, antibacterial, antitumor and so on, which has drawn great attention and research interests in the fields of food, nutrition and pharmaceutics. As a precious and scarce species, asparagus has abundant plant polyphenols,which is beneficial to human health. Commercial grading system, influencing factors and postharvest alterations of polyphenols were reviewed in this article so as to provide a theoretical basis for comprehensive development and utilization of asparagus, including dietary therapy and health care.
