Abstract:
Young ginger is the main cash crop in central and southern parts of China. Because of its unique flavor and crispy taste, young ginger is loved by people in southwest China. However, due to the flimsy and easily damaged skin, as well as difficulties in storage, young gingers are susceptible to softening, wilting, browning, and other problems, thus affecting the quality. In view of the above problems, the author discussed the research status of storage and processing technology of young ginger in detail, in order to provide reference for its storage and processing.
