Abstract:
In this paper, the basic concept and principle of hot air and microwave coupled drying were introduced,the advantages and disadvantages of coupled technology compared with other drying methods were pointed out. The current research status of hot air and microwave coupled drying technology in the field of fruit and vegetable processing was discussed, while influencing factors of coupled drying technology were summarized. The future development trend of hot air and microwave coupled drying technology was prospected.
