Abstract:
Soybean isoflavone is a secondary metabolite during the growth of soybeans. As a type of polyphenolic compound, it mainly distributed in the seeds, which are natural and safe. It can prevent and cure, diabetes, cardiovascular disease, osteoporosis and so on. Therefore, soybean isoflavones have long captured the interests from researchers in the fields of nutrition, medicine and food science. Extraction method is a key factor affecting the content and composition research of soybean isoflavones. At present, the extraction methods of soybean isoflavone includes solvent extraction, ultrasonic-assisted extraction, microwave-assisted extraction, enzymatic preparation method, and supercritical fluid extraction, and so on. By the speeding up of the industrialization, the development of soybean isoflavone extraction process in a green, pollution-free, low-cost, high-efficiency and high-yield way has become an urgent problem need to be solved. Herein, we preliminarily reviewed the research status of soybean isoflavone extraction methods in order to provide a reference for the future developments of soybean isoflavones.
