Abstract: In order to eliminate the interference of the solution turbidity at the end point of the titration,this experiment explored the use of a potentiometric titrator to determine the fatty acid in rice,using potentiometric titration,combined with the resolution effect of the alkaline titrant to avoid interference and improve sensitivity of end point.The results showed that compared with the national standard method,the accuracy and repeatability of the potentiometric titration method for the determination of fatty acid value in rice were not significantly different,and it could meet the requirements of the national standard performance parameters.
