醋栗果实发育中有机酸和类黄酮含量及体外抗氧化活性的动态分析

Dynamic Analysis on Organic Acids and Flavonoids Contents and Antioxidant Activity in vitro During Gooseberry Fruit Development

  • 摘要: 为促进醋栗资源的合理利用,本文以茶藨子属植物醋栗"坠玉"品种为试验材料,测定果实生长发育过程中纵横径、可滴定酸、类黄酮含量及体外抗氧化活性的变化。结果表明:醋栗果实生长发育过程中,果实可滴定酸含量随果实增大而增加;果实类黄酮含量随果实成熟逐渐下降;醋栗果实具有极强的体外抗氧化活性(DPPH、FRAP和·OH)。相关性分析显示,类黄酮含量与DPPH自由基清除能力呈极显著正相关性(P<0.01),与FRAP自由基清除能力呈显著正相关(P<0.05),类黄酮含量与清除·OH自由基能力相关性最弱。

     

    Abstract: In order to promote the rational utilization of gooseberry resources,the"Zhuiyu"of Ribesiaceae was taken as experimental material,the changes of length of longitudinal diameter and transverse diameter,content of titratable acid,flavonoids and antioxidant activity in vitro were determined.The results showed that the content of titratable acid increased with the growth and development of gooseberry fruit.The content of flavonoids in fruits decreased gradually with fruit ripening.The gooseberry fruit had strong antioxidant activity(DPPH,FRAP and·OH)in vitro.Correlation analysis showed that the content of flavonoids in gooseberry fruit was extremely significant positive correlated with DPPH free radical scavenging ability(P<0.01),and FRAP radical scavenging ability was significantly positive correlated(P<0.05).The correlation between flavonoid content and·OH free radical scavenging ability was the weakest.
