不同羽色儋州鸡鸡肉营养成分和血清激素含量的测定分析

Determination and analysis of nutritional components and serum hormone content of Danzhou chicken with different feather colors

  • 摘要: 为了对比不同羽色(麻羽、黑羽)儋州鸡鸡肉营养成分和血清激素含量的差异,试验采用《食品安全国家标准》推荐的方法分别对其胸肌、腿肌的常规营养成分和钙、磷含量进行测定,使用酶联免疫分析试剂盒分别对其1周龄、6月龄血清激素含量进行测定,并比较分析测定结果。结果表明:两种羽色儋州鸡胸肌和腿肌常规营养成分(粗灰分、粗蛋白、粗脂肪和粗纤维)和钙、磷含量接近,均差异不显著(P>0.05);两种羽色儋州鸡血清胆固醇和瘦素含量在1周龄和6月龄时差异不显著(P>0.05)。1周龄时,黑羽儋州鸡血清卵磷脂和生长激素含量极显著高于麻羽儋州鸡(P<0.01),雌二醇含量显著高于麻羽儋州鸡(P<0.05),黑羽公鸡孕酮和胰岛素含量极显著高于麻羽公鸡(P<0.01);6月龄时黑羽儋州鸡母鸡生长激素含量极显著高于麻羽儋州鸡母鸡(P<0.01)。说明两种羽色儋州鸡的营养价值接近,而雏鸡激素含量略有不同。

     

    Abstract: In order to compare the difference of nutrient composition and hormone content of Danzhou chicken with different feather colored(flaxen feather or black feather), the contents of routine nutrients, calcium and phosphorus of chest muscles and leg muscles were determined by using the methods recommended in the national food safety standards, the serum hormone content at the age of 1 week and 6 months was determined by using ELISA kit. The above determination results were compared and analyzed. The result showed that the conventional nutrients(crude ash, crude protein, crude fiber, crude fat) and the contents of calcium and phosphorus of flaxen feather Danzhou chicken were the same as black feather Danzhou chicken(P>0.05), but the difference was not significant. There was no significant difference in the contents of serum cholesterol and leptin between two different feather colored Danzhou chicken at 1-week-old and 6-month-old(P>0.05). At 1-week-old, the contents of lecithin and growth hormone of black feather Danzhou chicken was significant higher than that of flaxen feather Danzhou chicken(P<0.01). The content of estradiol was higher than that of flaxen feather Danzhou chicken(P<0.05). The contents of progesterone and insulin of black feather cock were significant higher than that of flaxen feather cock(P<0.01). At 6-month-old, the content of growth hormone of black feather Danzhou hen was significant higher than that of flaxen feather Danzhou hen(P<0.01). The results indicated that the nutritional value of two feather colors Danzhou chicken was similar, but the hormone content of the chicks was slightly different.
