Current Situation and Development Trend of New Technologies in Food Processing in Japan

By taking vacuum freeze-drying technology which has leading advantages in field of food processing in Japan as examples，technical characteristics，product advantages，specific processing processes and principles of new technologies in field of food processing in Japan were discussed，and enlightenments of some new technologies to development of food processing industry in China were also put forward.
