Abstract: The effects of dosage, extraction time and particle size on the extraction rate of volatile oil from ginger were studied by orthogonal experiment of L₄（2~3）, and the optimum process of volatile oil from ginger was obtained. In the extraction process of ginger volatile oil, the amount of application is the most important factor affecting the extraction rate of ginger volatile oil, followed by extraction time and finally particle size. The orthogonal experiment showed that the optimal extraction process of ginger volatile oil was 100 g, 4 h extration and 6 mm particle size, and the optimized process was stable and feasible.
