摘要: 花色苷是花青素与糖以糖苷键结合而成的一类化合物,是存在于植物细胞液当中的水溶性天然色素,属于是黄酮类化合物的范畴。按照《中国居民膳食营养素参考摄入量》的标准,花色苷摄入建议值为50 mg/d,其中蓝莓、黑莓是主要的花色苷补充来源,文章将集中于花色苷本身在降低疾病发生风险和人体保健功能方面的作用,综述花色苷提取的最新研究进展。Abstract: Anthocyanins are a class of compounds formed by combining anthocyanins and sugars with glycosidic bonds. They are water-soluble natural pigments existing in plant cell fluid and belong to the category of flavonoids. According to the Chinese Dietary Reference Intakes, the specific recommended value for anthocyanins is 50 mg/d, with blueberries and blackberries being the main sources of anthocyanin supplementation. This study will focus on the role of anthocyanins themselves in reducing the risk of disease and health functions in humans, and review the latest research progress of anthocyanin extraction.
