Abstract:
Tea residue are waste produced after tea is soaked and processed.Tea residue contains 18%~25% protein. Tea protein has a variety of biological activities in previous studies, such as antioxidant, lipid-lowering and radiation prevention, and good oil absorption, emulsification and stability and other functions. In this paper, the extraction methods and biological activities of tea protein were reviewed, and the existing problems were discussed to provide reference for the research of tea protein.
