Abstract: Enzyme engineering technology is widely used in the field of tea further processing, which is mainly used in the synthesis and extraction of tea natural products, as well as the clarification, processing, fragrance preservation and fragrance enhancement of tea drinks and instant teas. In this paper, the application of enzyme engineering in tea deep processing was discussed.
