摘要: 澳洲坚果干燥后果壳与果仁间会产生间隙,在破壳过程中容易造成果仁的碎裂,影响产品品质,导致果仁整仁率降低。澳洲坚果破壳技术是其产品深加工中的重要环节,文章主要针对澳洲坚果破壳技术的发展现状进行归纳分析,针对不同澳洲坚果破壳技术中存在的问题进行总结,提出几点发展对策,以期为我国坚果加工技术的进步和产业的发展提供帮助。Abstract: The drying of macadamia nuts will result in gaps between the shell and the kernel. During the process of cracking the shell, it is easy to cause the fragmentation of the kernel, which affects the quality of the product and reduces the whole kernel rate of the kernel. Macadamia shell cracking technology is an important link in the deep processing of its products. This article mainly summarizes and analyzes the development status of macadamia shell cracking technology, summarizes the problems existing in different macadamia shell cracking technologies, and proposes several development countermeasures, which are expected to provide help for the progress of country’s macadamia processing technology and the development of the industry.
