Abstract:
In this paper, the metabolomics of large leaf species(long oval leaf with brown stem, BS) and small leaf species(oval leaf with green stem, GS) of Duyun Maojian tea were studied based on Ultra performance liquid chromatography-quadrupole tandem time of flight mass spectrometry. The results showed that principal component analysis could distinguish the two tea varieties. Seven metabolites were detected by orthogonal partial least squares discriminant analysis, including four flavonols(myricetin, dihydroquercetin, quercetin and kaempferol), two catechins(epicatechin and epigallocatechin) and one phenolic acid(caffeoyl guinic acid). Further, pathway enrichment analysis showed that these seven metabolites were mainly involved in the flavonoid biosynthesis pathway. In addition, the contents of epicatechin and epigallocatechin were higher in GS variety, while the contents of myricetin, dihydroquercetin, quercetin, kaempferol and caffeoyl guinic acid were higher in BS variety, suggesting that GS variety was more suitable for the processing of green tea, and BS variety was more suitable for the processing of black tea.
