Abstract
In this study, the artificial aged rice seeds were studied by Fourier transform infrared spectroscopy(FT-IR), second derivative infrared spectroscopy(SD-IR) and two dimensional correlation infrared spectroscopy(2 D-IR). The results showed that the original spectra of artificially aged rice seeds were similar on the whole, and the intensity and shape of the absorption peaks varied from 1 800 to 800 cm-1 in the SD-IR. Meanwhile, the 2 D-IR showed that the position and intensity of the automatic peak in the range of 800 to 1 350 cm-1 were different with the increase of the aging time. In conclusion, the results showed that infrared spectroscopy could detect the artificial aged rice seeds quickly and effectively.
