Abstract: Enzyme-assisted extraction is a popular method due to highly efficiency,specification,simple process and mild conditions.A brief review about the types and characteristics of enzyme,the mechanism of enzyme,and influential factor on enzyme-assisted extraction was presented.In order to provide guidence for industrial developmet,the applications of this method on natural products were summarized.
