Abstract:
With the popularization and application of frozen storage and transportation technology for fish,shrimp and other aquatic products, Consumers’ requirements on the quality of aquatic products after thawing are gradually improved. The production enterprises also put forward clear demands on the thawing efficiency,uniformity, taste, quality and safety, nutrition loss and other aspects of aquatic products. Usually, the common thawing methods for frozen food are to thaw it directly in the air, or in still/flowing water. At present, the industry is still exploring new thawing technologies, mainly including low temperature and high humidity thawing technology, ultra-high pressure and strong thawing technology, resistance heating thawing technology, microwave thawing technology with frequency of 915 or 2 450 MHz alternating electric field, and RF thawing technology with frequency of 13.56, 27.12 or 40.68 MHZ alternating electric field. In this paper, several thawing methods of frozen products are analyzed firstly, and it is concluded that RF defrosting is one of the best thawing methods for aquatic products with low loss and high efficiency. Then, a RF defrosting device for aquatic frozen products is self-assembled, which core control component is composed of transistor RF generator, network matching device and load. The local and remote monitoring of RF thawing device is realized through 4G Internet of Things touch control integrated machine. Finally, the adaptability of the device is verified.
