Abstract:
At the 23rd Japanese Rice Taste Analysis and Appraisal Contest,there were 35 kinds of rice samples each from northern China and Taiwan area participated in the competition.Based on these rice samples,this paper conducts a comprehensive analysis from the quantitative distribution of varieties,characteristics,rice taste quality and physical and chemical indicators to explore the individuality and generality.The conclusion is that the samples selected from northern China are mostly long-grain varieties,while those from Taiwan area are mainly short-grain varieties,and fragrant rice is the main commodity rice in both places.In addition,the taste quality and the physical and chemical indicators of the participating samples in Taiwan are slightly better than those in northern China.Among the samples in the northern region,varieties of Daohuaxiang 2 and Jihong 6 were selected by Yihai Kerry.They both got a higher score among samples of the same variety,which might be related to the timely harvesting and low-temperature drying.
