广东省预制菜产业发展现状分析

Analysis on the Curkent Situation of Prefabricated Vegetable Industry in Guangdong Province

  • 摘要: 预制菜是指以农、畜、水产品为原料,配以各种辅料加工而成的成品或半成品。与冷冻食品相对比,预制菜在营养、口感、味道等方面都有较大提升,并列包容性更强,可为消费者提供更多选择。加工深度方面,冷冻食品的加工深度要高于预制菜食品。近年来由于疫情、懒人经济的发展等原因,预制菜产业发展迅速。作为一个新兴产业,预制菜具有市场空白巨大、未开资源众多等机遇,但也面临着相关专业人才匮乏、科研平台不足、生产标准缺少等挑战。本文论述了预制菜产业的发展背景和现状以及在乡村振兴大背景下,预制菜产业未来发展趋势和现阶段存在的问题,并对预制蔬菜产业发展进行展望,旨在为预制菜产业良好发展提供理论参考。

     

    Abstract: Prefabricated delicacys refer to finished or semi-finished products processed from agricultural,livestock and aquatic products with various excipients. Compared with frozen food, precast food has greater improvement in nutrition, taste, taste and other aspects juxtaposition inclusivity, which can provide more choices for consumers;in terms of processing depth,the processing depth of frozen food is higher than that of precast food.In recent years, due to the epidemic situation, lazy economic development and other reasons, the emerging industry of prefabricated delicacys has developed rapidly. As an emerging industry, the prefabricated delicacy industry has opportunities such as huge market gap and many unopened resources, but it also faces the shortage of relevant professionals; the lack of relevant scientific research platforms; and the lack of relevant production standards. This paper discusses the beginning, development and current situation of the prefabricated delicacy industry, as well as the future development trend of the prefabricated delicacy industry and some existing problems at present stage, and looks forward to the development of the prefabricated delicacy industry in order to provide a theoretical reference for the good development of the prefabricated delicacy industry.
