Abstract:
Apricot is a special agricultural product in Xinjiang, because of its unique geographical location and high quality. Due to the remote location and transportation difficulties, drying apricot can increase the added value of agricultural products and improve the quality and benefit of apricot. There are many kinds of apricot fruits in Xinjiang. The typical drying of apricot fruits is characterized by hanging drying. That is to say, the dried fruits are dried in the natural air, so that the fruits are in the unique low temperature and low humidity environment in Xinjiang, which can greatly improve the drying quality. However, apricot drying technology mainly uses other fruit drying methods for reference, and fails to form a unique quality control drying technology, which is not conducive to the long-term development of apricot. This paper summarized the characteristics of all kinds of apricots in Xinjiang, sorted out the planting area and yield characteristics of little white apricot, Saimaiti apricot, dried apricot and other varieties, sorted out the drying technology and detection methods that can be used for reference in the drying process, and put forward the countermeasures for carrying out the research on the adaptability of drying technology combined with the needs of Xinjiang; This paper summarized the most representative natural drying methods of hanging dried apricot in Xinjiang, summarized the relationship between apricot ripening period and drying quality, drying control of sugar acid ratio, process simulation and other issues, combined with the reality of Xinjiang, put forward the improvement of drying technology and the drying method of simulating the natural drying process, which can provide current support for the research of Xinjiang apricot drying technology.
