Effects of Different Treatments on Texture of Postharvest Mango Fruits

  • The aim of this study is to determine the effects of exogenous ethylene and ripening inhibitors on textural properties of mango fruits after harvest.Therefore,the‘Hongyu’mango fruits were used as experimental materials,and stored at 15℃and 85%relative humidity after treated with ethylene,1-methylcyclopropene (1-MCP)and gibberellin (GA3).Then the textures of postharvest fruits were determined at 0,4,8,12,16,20 and 24 d by Texture Profile Analysis (TPA) method.Results showed that after ethylene treatments,the hardness,fracturability,chewiness,gumminess,springiness,cohesiveness and resilience of mango fruits were decreased rapidly,while the adhesiveness was increased quickly.Moreover,the fragility was descended more rapidly with the increase of ethylene concentrations,while the chewiness and adhesiveness were reduced more slowly.The 1-MCP and GA3treatments could keep the hardness,fracturability,chewiness,gumminess,springiness,cohesiveness and resiliency of mango fruits at high levels,and delay the rise of adhesiveness The correlation analysis showed that there were significant positive correlations between hardness and fracturability,chewiness,resilience,while there were remarkable negative correlations between adhesiveness and chewiness,gumminess.The texture of mango fruits could be well evaluated by TPA method.Exogenous ethylene treatment could accelerate the textural changes of mango fruits,while 1-MCP and GA3treatments could delay textural changes of postharvest fruits,and 1-MCP treatment showed superior preservation effects.
