Effect of High Humidity Environment on Postharvest Storage Quality of Spinach

Abstract
To study the e ffect of hig h humidity environment on storage quality of spinach after harvest, spinach was stored at(13±1) ℃ in a common cold storage(relative humidity 70%~75%) and a cold storage equipped with high-humidity spray equipment(relative humidity 90%~93%), respectively. The sensory quality, physiological and biochemical indexes of spinach during storage were measured. The results showed that high humidity effectively maintained the sensory quality of spinach during storage, inhibited the increase of weight loss rate and relative conductivity, delayed the decrease of vitamin C, chlorophyll and soluble protein contents, and enhanced the enzymatic activities of catalase(CAT) and ascorbate peroxidase(APX). Therefore, high humidity could improve storage quality of spinach and delay senescence.
