Research Progress on Extraction and Antibacterial Effects of Chlorogenic Acid

  • Chlorogenic acid(CHA) is a phenylpropanoid substance produced by shikimic acid pathway during aerobic respiration in plants, and has exhibited multiple functions including antioxidant, antibacterial effects, and has been widely applied in food, medicine, health care, chemical engineering, and other fields. In this paper, the research progress on biological activities, extraction methods and antibacterial effects of CHA were summarized,which could provide theoretical basis for further improving the extraction methods of CHA and expanding the applications of CHA in fruits and vegetables preservations.
